Whole-Orange Cake


  • Orange (2)
  • Egg (6)
  • Almonds (250g)
  • Coconut Sugar (250g)
  • Baking Powder (1 tsp)


  1. Bring a large pot of water to a boil.

  2. Clean the oranges then put them in the water and boil them until they are very soft (about 1.5 hours).

  3. Remove the oranges from the water and let them cool.

  4. Preheat the oven to 190°C.

  5. Blitz the oranges using a food processor (or in my case, a very powerful stick blender works just as well). Use the whole orange, pips, skin and all!

  6. Beat the eggs in a large bowl.

  7. Add all the ingredients to the eggs and mix thoroughly.

  8. Bake in the oen for approx. 1 hour (or longer if still wet), checking regularly.

  9. Cool the cake on a wire rack in the tin before removing from the tin.

  10. Enjoy! (I like to serve mine with some greek yoghurt).
