- Pumpkin (1/8)

- Rosemary (1/2 tsp)
- Seasame Seeds (1 Tbsp)
- Pumpkin Seeds (1 Tbsp)
- Tamari (1 Tbsp)
- Mixed Salad Leaves (Handful)
- Extra Virgin Olive Oil (2 1/2 Tbsp)
Preheat oven to 200°C.
Cut the veggies into 3cm cubes.
Finely cut up the garlic.
Combine the veggies, garlic and 2 Tbsp of olive oil in a roasting dish.
Cook the veggies until soft (30-40 mintues), turning occasionally.
Bring a small pan to a medium heat and add the remaining 1/2 Tbsp of olive oil.
Add the seeds and cook until they are golden (about 2 minutes).
Remove the seeds and allow them to cool slightly before mixing in the tamari.
Combine the veggies and seeds and serve on a bed of mixed salad leaves.
