Roast Vegetable Salad with Soy Toasted Seeds


  • Pumpkin (1/8)
  • Potato (2)
  • Carrot (2)
  • Garlic (1 clove)
  • Rosemary (1/2 tsp)
  • Seasame Seeds (1 Tbsp)
  • Pumpkin Seeds (1 Tbsp)
  • Tamari (1 Tbsp)
  • Mixed Salad Leaves (Handful)
  • Extra Virgin Olive Oil (2 1/2 Tbsp)


  1. Preheat oven to 200°C.

  2. Cut the veggies into 3cm cubes.

  3. Finely cut up the garlic.

  4. Combine the veggies, garlic and 2 Tbsp of olive oil in a roasting dish.

  5. Cook the veggies until soft (30-40 mintues), turning occasionally.

  6. Bring a small pan to a medium heat and add the remaining 1/2 Tbsp of olive oil.

  7. Add the seeds and cook until they are golden (about 2 minutes).

  8. Remove the seeds and allow them to cool slightly before mixing in the tamari.

  9. Combine the veggies and seeds and serve on a bed of mixed salad leaves.
