Moon Bread

Ingredients

  • Egg (3)
  • Cream of Tartar (1/8 tsp)
  • Cottage Cheese (3 Tbsp)

Method

  1. Preheat oven to 150°C.

  2. Separate egg whites and yolks.

  3. Whisk whites and cream of tartar to stiff peaks.

  4. Whisk yolks so they are mixed have a smoother consistency.

  5. Gently fold half of the egg whites into the yolks.

  6. Add the remaining egg whites and combine carefully.

  7. Find your best non-stick oven tray (or baking paper, or spray, whatever your best option is) and make 6 blobs of the mix.

  8. Bake for 30 minutes.

  9. Leave them to cool and firm.

  10. Use them as burger buns, or bread for a sandwhich.

How this recipe promotes a healthy gut

Protein is an essential part of your diet and you should aim to have a bit of it with every meal. I've found that moon bread is an excellent way to achieve this on the days when I just want to make a simple sandwhich, and because they are so protein dense it really doesn't take much to fill me up!
