- Kumara (3 - different colours)
- Baby Spinach (handful)
- Capsicum (2)
- Sea Salt (pinch)
Preheat oven to 180°C.
Rince and peel the kumara, then cut into 2-3cm thick slices.
Place the kumara on an oven tray and lightly drizzle them with oil. Bake the kumara for 10-20 minutes (or until soft).
Cut the capsicum into squares.
Once the kumara is ready, arrange into stacks using the pattern of kumara -> capsicum -> spinach, using three slices of kumara, with kumara being the top layer.
Bake the stacks in the oven for 20 minutes.
Sprinkle each stack with a pinch of sea salt and serve!
