- Carrot (8)
- Extra Virgin Olive Oil (2 Tbsp)
- Liquid Honey (2 Tbsp)
Preheat the oven to 180°C.
Cover an oven tray with baking paper and then drizzle a small amount of oil across the paper.
Cut the carrots into sticks.
Remove the tray from the oven. Place the carrots on the tray and drizzle the oil and honey over them. I use a brush to make sure they all get an even coating.
Roast them in the oven for 45 minutes until they are nice and tender.
Optional: grill them for 5-10 minutes to make them nice and crunchy.

Carrots contain Vitamin A, which is great for your eyes, which is why you might recall your parents telling you to "eat your carrots, they'll help you see in the dark!". Carrots can also be difficult to digest so if your gut isn't feeling quite right, maybe set them aside until things are working well again.
