- Cauliflower (1/4 of a whole cauliflower)
- Cottage Cheese (4 Tbsp)
- Ground Paprika (1 tsp)
Cut the cauliflower into small florets.
Boil, roast or steam the cauliflower until it is soft enough for a knife to be easily inserted. I prefer to steam mine becuase it holds a bit more moisture.
Mix the cauliflower and cottage cheese together then blitz it together using a stick blender or food processor until combined.
Serve with an even coating of paprika sprinkled on top.
