- Desiccated Coconut (1 cup)
- Almond Meal (1/3 cup)
- Coconut Oil (1/4 cup + 1 Tbsp)
- Almond Butter (1/3 cup)
- Liquid Honey (1/4 cup)
- Almonds (1/4 cup)
- Ground Cinnamon (1/4 tsp)
- Vanilla Bean Extract (1/2 tsp)
- Dark Chocolate Chips (1/2 cup)
Combine 1/4 cup of coconut oil and almond butter and melt in the microwave (30s - 1min). Stir them together until smooth.
Add the honey and vanilla bean extract and stir to combine.
Mix in the dessicated coconut, almond meal, and sliced almonds. Mix it all together until it starts to form a ball.
Pour the mixture into a loaf pan and set aside.
In another small bowl, combine the dark chocolate chips and 1 Tbsp of coconut oil.
Put the mix in the microwave and melt in 30s increments. Stir until it reaches a smooth consistency.
Pour the chocolate drizzle over the coconut almond mixture.
Leave to set in the refrigerator (about 20 minutes).
